A new issue every month ish. The fan translations for them are pretty well caught up and release English translations shortly after the Japanese release. As of 3/14/12 Chapter 51 of Volume 12 was released in English.
I myself hope for a third season just to continue the anime, because even though it highly digressed from the manga it was still enjoyable. I had scoured the Internet and found many rumors and some people who have "confirmed" a season 3 in May, as the other guy had said, but again, that's two months away so we won't know until then.
@Soundmonkey I can fill you in on that, while I absolutely love and adore Spice and Wolf (and more mainly, Holo ) There will not be a season 3. Even though the light novels are 100% done they won't continue it, although I am not sure why. As a loyal Spice and Wolf fan I woulda squeal like a school girl if I heard about it officially. The manga of it, not even worth mentioning since that is, last I checked, only now catching up to the anime's length.
Bottom line: I wish to see a season 3 of Spice and Wolf more than R+V, but I have to wait for Yen Press to release the damn novels faster (6 month releases? Ridiculous!!). I don't have to worry about waiting for R+V manga since chapters are released then translated to English by 4 different people/companies.

I can't wait to see how Tskune handles Kyoyou (the fire fox guy), as of Chapter 51 he's about to smash him. And I wonder what moka's full reaction will be seeing Kurumu and Mizore there before everyone else.
guys i love this anime just as much if not more than all of you but ive talked with gonzo execs and thus far there is no idea or plans to move ahead with a season 3. for those who dont know the reason they didnt make a season 3 was because gonzo went into the red zone with profits and they had to cut their staff of 160 down to 30 and they also were adapted into their mother company. personally id love for a season 3 to come out but the fact is that we might not get it.

Its funny it was a great anime but all good thing must come to a end.
