I like the second Mushibugyo Opening, Yu-Gi-Oh! Zexal and Zexal II Japanese Openings and Endings, most of the Heaven's Lost Property Forte Endings, and recently, the full opening for BlazBlue Atler Memory.

Kids on the Slope or Sakamichi no Apollon is a great one if you're a fan of jazz. It uses a bunch of classic jazz pieces in it but also intermingles newer stuff with some very creative reworkings of classics that made me fall in love with jazz all over again when I viewed it.

Anyone watch "Watamote"? The opening music is quite good if you like metal or punk!

I really liked Fairy Tail's 6th(?) ending "Be as One" by W-inds. I dig most of the music in anime's and have found a lot of good artist from it. T.M. Revolution, Abingdon Boys School, and Scandal being the big standouts for myself. Though I'm also a fan of Japanese Rock music in general Luna Sea is easily my favorite Japanese band, so much so that I made it a point to see them live while in Japan, but I also dig X, GLAY, L'Arc-en-Ciel, B'z, and a few others.

I love a lot of Death Note's soundtrack. I should really look up the composer one of these days to see if he/she/they have done any similar work. Persona 4: The Animation's soundtrack is quite good as well. Not just because the video game's soundtrack came along for the ride but also because of the anime exclusive tracks.

I listen to a lot of anime music for inspiration or to sample in some way and Kill la Kill has some great music too.

I'm usually better at coming up with things at the top of my head rather than trying to focus, but anime themes and soundtracks are really beautiful or awesome. At the moment, I like to listen to a calm song called Himitsu Kichi by Takada Kozue. It's an ending for Eureka Seven, and it's beautiful.
