Given your list of favorites you seem to have a liking for the darker anime. Ergo Proxy btw is one of my favorites.
I would say try:
High School of the Dead.
Gantz
Samurai X
Demon City Shinjuku
Wicked City
Black Lagoon
Armitage III
Angel Beats (funnier but a little dark too)
Higurashi no Naku Koro Ni
Requiem for the Phantom
Toaru Majutsu no Index
with the exception of Angel Beats most of these are pretty dark, some especially so like Higurashi. If you're interest in something a little lighter let me know and I can suggest some there as well.

Thank you so much for all the suggestions! I do seem to be attracted to darker anime, or psychologically thrilling/obscure/intense anime. The funny/ironic thing is I actually have a very difficult time watching live-action (real actors/cast) movies or shows that even touch on the topics anime tends to, but within the realms of anime, I can tolerate watching girls getting tortured (though it's still hard), it feels REAL, or raw, and serves to convey a greater meaning. Something within me gravitates towards those shows, but I do have to balance things out so I feel a little ease at times, or enjoy something that's a guilty pleasure.
So.. I'm definitely up for those suggestions as well! I notice when I go on a dark anime binge, I start to need something to balance things a bit (xxxHolic was so incredible for this, I may just bite the bullet and try to really enjoy the subtitled versions). Haibane Renmei was a great example of a light anime that still had an interesting, intellectually stimulating, and somewhat profound deep meaning within it. But I don't mind anything with fanservice or T&A, in fact I kind of enjoy a bit of that, or don't mind it at all I should say. I've always loved how anime girls look, and enjoy drawing them, so it doesn't have to be conservative, just as long as there's a wonderful story/thread that weaves within it.
I also just finished 'Mnemosyne - Rin - Daughters of Mnemosyne ' - I felt like this anime was well done, it all tyed together, answered any questions it provoked, and had a beautiful meaning/story behind it. This anime definitely jumps head first into gore/sex at times, but because the story was so well done, it was not at all bothersome, it fit within the story very well, and was all well placed for me.
What about 'Eden of the East'. I watched the first episode, and it looked really cute, but I wasn't sure if it would get deep enough for me. I could already tell the animation and writing was well done though, so I have a plan to revisit it. Is it a pretty good one to consider for something more light-hearted?
Eden of the East is a great series, and it's more light than many on my list, it's a mix of comedy, action and some seriousness.
As for watching anime in subtitles, I usually prefer to watch almost all anime subbed, but there are a few exceptions. Gantz is actually one of them, as well as Samurai X.
Back to the balance in watching anime, if you've been watching too much darker themed series/movies then here are a few lighter suggestions:
