What I meant was no grim dark series, but I do prefer a consistently gray tone that is a little dark and a little light or mostly light-hearted with a little bit of dark (just how I work).

Night Raid 1931: It was okay. Definitely worth a try, but try and get it on sale somewhere.

You listed Blue Exorcist as "unrated": If you haven't started buying this yet, I'd hold out for the eventual rerelease with the dub. Not sure how fond you are of manga, but I'd also recommend reading that over watching the anime. The anime's ending isn't exactly terrible, but it wasn't the greatest. There's also some fanservice for males (Shura wears short shorts and a bikini top).

I think you're good with Bandai stuff. But for Haruhi, have you gotten the movie and season 2? If you haven't for sure get the movie, but maybe wait to see if you can season 2 for cheap somewhere. Endless 8 and the high price tag don't mesh, though the other episodes are worth it and I personally liked E8 to an extent.

I'd recommend Steins;Gate, but it violates some of your criteria (based off of VN, lots of female characters). If you're willing to give it a try, it has a good story and Okarin is hilarious. If you can find some way to stream it (like at a library or something), the first 4 dubbed episodes are up for free.
Legend of the Legendary Heroes: Greatly enjoyed this one. Ferris shares the spotlight with Ryner equally. I like her well enough, but some people dislike her. Has an open ending.

Pandora Hearts: Good story and characters, though it moves slowly and is dialogue heavy (given you liked DRRR I don't think that'll be too big of a problem). It's a mystery and the ending is incomplete as a result since the manga is still ongoing. If you don't object to reading manga, get that instead and only get the anime if you really like the manga. (Unless the unfinished thing doesn't bother you as much as it does others...) You probably already know this, but it isn't dubbed.
And definitely get Natsume. It's a very heartwarming show.

I've own ALL of Haruhi Suzumiya, overall, it's a 4. Already have Natume's Book of Friends on per-order, was already planing to get the manga, but I haven't seen it, hence why it's not rated.

And from what I get, most, if not all, visual novels, are about a guy picking whatever girl he wants. The same with Legend of the Legendary Heroes, I see it labeled as romance, so I avoided it. I can deal with a bit of romance, but not a lot. Another reason why I haven't touched Spice & Wolf and other titles, see the romance label and don't bother because I don't know the level of romance.
And unfinished endings don't bother me. I own Blood Black Brothers, granted got it for like $12, so can't complain. I was planing to get the Pandora Hearts manga, I might get the anime when it goes cheap on RightStuf.

Steins;Gate has nothing to do with Chaos;Head other than a quick reference (I watched Steins first and have yet to rewatch it in full, so I didn't notice recognize any references to Chaos, but I've read that there was maybe one or two). There isn't any real connection between the two story-wise. There is some romance toward the end, but it isn't a whole lot. The second half is more obvious with its VN origins, but it is less about picking a girl than correcting the mistakes the lab members make. But again, don't buy it unless you're able to find some way to stream it first, just because it does violate two of your criteria (VN and lots of females) and wasting money isn't fun. As a side note: I hated C;H but loved S;G.
LOLH is also not romance-heavy. Ferris might have feelings for Ryner (as do a couple of other girls), and there is another couple in the show, but it definitely isn't a focus. It is more action-oriented with some fantasy politics and plenty of pretty-boys.
If you don't like romance-heavy stuff, then yeah, stay away from Spice and Wolf. Far away. I loved it for the character interactions and economics talk, but the relationship is a driving force in the show.
I don't know how much cheaper you'd be able to get the PH anime for, but TRSI might have it on sale during the holidays. Glad to hear you're interested in the manga, though, given you said you don't like to buy manga that have an anime. Barnes and Noble has the volumes for around $7-8 other than the pre-orders (13-15, 12 is heavily discounted because it comes out this month) and for some reason volume 8, and you get free shipping with a $25 order. Amazon has similar pricing.

Simple, S;G takes place a year after C;H, the games take place in the same world. And thanks for the pop culture reminder...I would never be able to understand them. I've seen dubs with pop culture references, I never understand them. And when they try to make jokes funny in gag dubs, they're not funny because I don't understand it.
Oh! Edo Rocket is a good example, my friend let me borrow the DVDs and I don't find any of the jokes funny because I had no idea what they were referring to or the jokes were just plain awful, as if trying too hard to be funny.
