Every title you mentioned that you think is more "niche" than Bake was released years before it when dubbing almost everything was the norm or when releasing it subbed first was a way to judge whether or not a dub was viable. The two that you site as being just as niche as Bake, Clannad which was released sub only first and dubbed later by Sentai and since every Key property beforehand had been dubbed it was almost inevitable that it would be(and not to mention that it's status as a Key property most likely made it more well known then Bake over here) and Angel Beats! which got a dub because it got licensed by Sentai and they deemed it worthy of a dub due to it's extreme popularity, possibly even more so in the US than Bake don't help your argument.
Would you like to know a little fact. Greg has stated that they've dubbed Clannad back in 2008...so...they really did rip the fans off when the sub-only came out first. I think they were expecting to make some extra money that way.

Also, 2008 was when ADV was there...meaning, they were going to release is under ADV instead of Sentai, so yeah, everything was done in 08-09, with the mindset of getting out when ADV was still around.
