Trinity Blood. I know the creator passed away, but that Anime could use a reboot plus a sequel. They finished with Abel and Ion setting out to find Cain. It really felt like there was more to that story. I do enjoy this series in all its forms, and some of the characters could really use some more fleshing out on the Anime side (Hugue and Leon come to mind).
Come to think of it, a prequel would also work, though I think it would have to garner appeal as a Manga first, seeing as how ALOT of prequels have proven to really suck.
Fruits Basket, Rave Master, and Devil May Cry. As always, I put my main vote in for more Kyou Kara Maou! Yuuri's parents haven't even seen his kingdom yet. Bob needs to meet Lady Cecilia. It can't be done yet.
What I would love to see is a third series for Clannad. It would consist of four mini-arcs dealing with the alternative paths Tomoya could take in the visual novel. They would be each about 6 episodes long with one dedicated to Tomoyo, one to Kyou, one to Ryo and one to Kotomi. I'd call it "Clannad: Other Worlds" or "Clannad: The Another World Collection".

One more thing about Saiyuki. I have the dubbed versions of seasons 1-4 and the movie. I love the voice talents themselves that were used for both seasons 1-2 and seasons 3-4 but it just didn't seem the same when they changed the voice talents for seasons 3-4, so I would like it if seasons 3-4 were redone with the voice talents from seasons 1-2. I hope you understand what I'm trying to say.

Initial D needs another season. One last season is all it needs to finish since the manga is ending.
I am going to say that Kekkaishi should have a sequel, as well as Xam'd. Both series would benefit from a sequel.

The series that immediately come to mind for me are Rurouni Kenshin, Elfen Lied, and Rave.
As for sequels, I want Toaru Majutsu no Index to get another season and have its story continued.
